Rocket and Orange Salad with Halloumi
A deliciously tasty and easy lunchtime salad, ready in less than 10 minutes. Packed full of nutrients from whole foods for skin, heart and bone health, this lunch is a great source of calcium (rocket and halloumi), vitamin A (rocket and walnuts) and free-radical fighting antioxidants vitamins C and E (rocket, oranges and walnuts).
1. Place fresh rocket on a plate. Segment the orange removing all the pith and skin leaving pure orange flesh. Segment the orange over a bowl to catch all the juice and squeeze the rest of the orange. Set aside. Roughly chop some walnuts placing on the rocket with the orange segments.
2. Slice the halloumi cheese into 1cm slices and either grill or lightly fry until a golden brown either side (3-4 minutes). Drizzle olive oil over the salad (optional). Meanwhile, mix the orange juice with pomegranate vinegar and drizzle over the salad. Pomegranate vinegar is a great digestive aid and helps the body absorb calcium, particularly the non-dairy calcium source. Enjoy!
